Lentil is an excellent source of vegetable protein, fibre, the B vitamins, potassium, calcium, magnesium and zinc. It is low in fat and has no cholesterol. This dish is a particularly healthy addition to the menu of people with elevated cholesterol, diabetics, wanting to lose weight, vegans or vegetarians.
Ingredients:
1 cup (175g) small brown French lentils
1 small onion, chopped
1 teaspoon grated fresh ginger
3 tablespoons peanut oil
½ teaspoon ground turmeric
½ teaspoon ground cumin
1 teaspoon garam masala cayenne pepper, to taste
1 tablespoon wine vinegar
1 tablespoon lemon juice
Fresh coriander leaves
Preparation:
Cook lentils in boiling water for about 35-40 minutes until just tender, then drain well.Fry onion and ginger in oil until soft. Add turmeric, cumin, cayenne pepper, cook for 1 minute.Add lentils to the pan, stir around coated with the spices. Remove from the heat, stir in the vinegar and lemon juice.Transfer to a serving dish. Let stand until cold then garnish with the coriander leaves.
